Hand picking of plant tea (tea leaves)
Plucking process from tea plantation from its homeland in Southeast Asia, specifically from Sri Lanka, where the original home of the finest tea in the world, as its growth thrives in tropical climates.
It is the process of withering the green leaves that are picked from the tea plant. In this process, the water content in the leaves is reduced. This is done by laying out the tea leaves in big troughs on a wire mesh to dry for 18 hours. It is possible to increase the time of withering in order to reach a water content between 55% - 75%. The leaves become soft and smooth and are now ready to the next stage
Rolling is the process of initiating oxidation in tea leaves and means the break of cells within the leaves; which causes the release of natural juices from them. The work is done using a large rolling machine on which the crushed leaves are rolled, then the small pieces are sorted in the first round of rolling, while the large pieces are subjected to a second round, and sometimes it is necessary to be rolled for a third time in order to obtain the required size
The oxidation process determines the tea's colour and flavour that we drink every day, the purpose of this process is to darken the colour through the development of many compounds found in the tea, these chemical compounds belong to polyphenols, then the leaves are laying out again for 30 minutes to absorb oxygen in open air
The last step in the production of black tea, where the oxidized leaves are placed inside large dryers that dry the leaves by stirring them, and sometimes drying is done in another way, by passing the oxidized leaves through hot air dryers. This further reduces their water content to about 3%, leaving them ready to be sorted and packed
After the above four production steps are completed, the tea is ready be packed and marketing. As we all know that making a cup of black tea at home is very simple and easy, you only need to heat the water until it boils, then add a spoon or more of black tea, and leave it inside the jug to get the delicious tea that you love
